What’s so special about the Golden Egg?

The Golden Egg Chardonnay is crafted using an innovative winemaking method that begins with hand-picking fruit from our Two Terraces and Kokako Farm vineyards. This hands-on approach is crucial to ensuring we maintain full control over the quality of the grapes, particularly in a challenging vintage like 2023. The grapes are then whole bunch pressed, a technique that gently extracts the juice while minimizing bitterness and harsh tannins from the skins and seeds. This method preserves the purity and elegance of the fruit, resulting in a more refined and balanced wine. Once pressed, the juice is transported to our Urban Winery and pumped into 1600L concrete egg-shaped tanks. These eggs aren’t just for show—they utilize the Golden Ratio, a principle that creates natural convection currents during fermentation.  This constant movement ensures that the wine is in continuous contact with the lees (the dead yeast cells that add texture and flavor), enhancing its depth and complexity. The egg’s larger surface area compared to a traditional barrel also adds to this wine’s distinct mineral-driven, fruit-forward character. The result is a textural Chardonnay that’s a far cry from the oaky, buttered styles of the past.

Tasting Note: Pale straw with green highlights. Aromas of white flowers, lime blossom, and honeydew melon, with a flinty, dry stone minerality. The palate is energetic, with pink grapefruit and honeydew melon juiciness, flowing into a silky texture. The finish offers a saline mineral quality, with fresh, textured acidity that leaves a salivating lingering finish.
